Whole30 Duck Stir Fry

My first recipe! My husband and I collaborated on this Whole30 Duck Stir Fry last night. YUM! I never think to buy duck, but it's so flavorful and easy. Duck can be a fatty meat, but in this recipe you'll drain off all of the fat from the duck which leaves it tender, juicy and not overbearing. Try this on its own or over cauliflower rice. Yields 2-3 servings.

2 large duck breasts (400-500g or 1 lb)
2 cups sliced mushrooms
2-3 sliced carrots (depending on size)
2 sliced bell peppers (I used red + yellow)
1 sliced large onion
1 sliced green spring cabbage
1 tbsp coconut oil
3 tbsp coconut aminos
2 minced garlic cloves
Salt + Pepper for seasoning
Chili flakes to taste

1. Dry off duck breasts and pre-heat oven to 400 F/200 C with an empty baking tray inside.
2. Season the duck generously with salt and pepper. You should use a good amount of salt as the salt will help to draw out the fat from the skin.
3. Add the duck to a cold pan (without oil) skin-side down, then turn on stove/hob to a low heat. After 3-4 minutes, increase heat to medium. There should be visible fat from the duck in the pan now. Pan fry for an additional 5-6 minutes until skin is golden-brown then flip. Cook on other side for 1-2 minutes on low heat to seal in flavour. 
4. Transfer the duck breasts to the hot baking tray, skin-side down and place in oven, then dispose of duck fat. The duck will take approx 11 minutes in the oven, and once done, set on a cutting board to rest.
5. While the duck is cooking and using the same pan, add 1 tbsp coconut oil and heat on medium-high heat.
6. Add onions and cook until translucent. Add carrots and cook for approx 4 minutes, then add cabbage and sauté for additional 4-5 minutes, tossing frequently. If cabbage does not reduce, add 1-2 tbsp water to help steam.
7. Add peppers, mushrooms and 1 tbsp coconut aminos. Add minced garlic cloves and chili flakes to taste. Stir.
8. After another 3-4 minutes (or until peppers are done) toss with remaining coconut aminos and remove from heat.
9. At this point your duck should be well rested on the cutting board. Slice the duck breast diagonally then top over stir fried vegetables once plated. Enjoy!
